When I moved recently, I knew I wanted to start over fresh. I wanted to create a healthier, more active lifestyle than I had before. New town, new habits! Thankfully, the town I moved to is a very active community. There are bike and running trails everywhere and loads of healthy food in the grocery stores. It has been a great change these last 2 weeks. I have even learned to develop a love of jogging. I never thought I would hear those words leave my mouth, but I do love it! I am not the fastest, but I love how my body feels when I finish a run.

Healthy Breakfast Stuffed Peppers Recipe

Breakfast can be rough. I wake up and I am not usually that hungry, but it is like this sudden wave of starvation that hits me and I know I need breakfast… NOW! That is when I find myself at a crossroads. Either I can turn to the sugary goodness we like to call cereal (that literally sings to my soul) or I can make a smart choice for my breakfast. I really do try to make the smart choice, but I have learned that I have to have a few healthy breakfast ideas before I even walk into the kitchen or else those crunch berries start playing tricks on my brain.

I came up with the perfect solution for those mornings… healthy breakfast stuffed peppers! They are all full of all of my favorite healthy breakfast items.

These breakfast stuffed peppers fill me up all morning. When I start my day with these peppers for breakfast, I don’t find myself roaming in the kitchen looking for random snacks all morning. They can easily be adjusted for different diets such as Paleo or Whole 30 too.

Healthy Breakfast Stuffed Peppers

Serves: 1
  • 1 Bell Pepper hollowed and sliced in half
  • 3 Egg Whites
  • 1 Egg
  • 1 Slice Turkey Bacon
  • 1 Cup Spinach
  • 1 Tbsp Feta Cheese
  • 1 1/2 tsp Olive Oil
  1. Heat olive oil over medium heat in a pan.
  2. Put bell pepper halves on the pan and let them grill on each side.
  3. While peppers are cooking, scramble egg whites whole egg, and spinach together in a separate pan.
  4. Once the eggs are cooked, cook turkey bacon in the pan.
  5. Slice up turkey bacon and add it to the egg mixture.
  6. Stuff peppers with the egg mixture and top with feta cheese.

Teaching Kids Healthy Habits

When Dave and I were first married, we would talk about our future family. We would talk about dreams we had for our family and what types of things we wanted to do to create a happy family unit. One thing we both would talk about was our desire to raise a healthy family. Now that we are parents, we are put in the position to make that dream a reality.

It can be tough to make your kids eat all of their vegetables, but one thing that is easy to teach your kids about is exercise. Kids don’t look at being active as exercise. They look at it as play. Have you tried to play some of their activities lately? They can be a good workout! What happens between age 4 and 30 to make us realize that being active is no longer an enjoyable activity, but is looked out as exercise? I think life just gets in the way a lot of times, but I also think it is important to each kids while they are young that being active isn’t a bad thing. It can be fun and should be a natural part of their daily lives.

Teach health through playing with your kids

The best way to teach a child about healthy habits, is through example. Get out there and live a healthy and active lifestyle that your kids can see. Even better? Involve your kids too! Here are five ways I suggest teaching your kids about staying active as an adult.

1. Go for a walk- We love going for walks as a family. It is a great time to get outside, get unplugged from our devices, and to be able to enjoy conversation. It is great exercise too! You can play different games with younger kids if they get restless if they are in a stroller during a walk too. You can have them listen for different things and have you guess what they hear, or have them look for items on your walk too!

2. Do an exercise video- I love doing exercise videos when the weather is no good outside. Although the workout is usually a little more intense if I do it during nap time, I prefer to do my workout videos when my daughter can participate with me. She doesn’t do anything with weights or anything, but she loves to mimic my actions. She isn’t necessarily getting an intense aerobic workout, but she is watching her mom do an exercise while engaging with her. It is all about teaching by example.

3. Play on the playground- This can be a seriously intense workout as an adult. As a kid, I never thought about how much work it was to swing, run up the tires, or climb the monkey bars. Playing on a playground is just natural for kids. Little kids love seeing their parents play with them on the playground. This is a great way to show your kids that you want to engage with them, but you aren’t too lazy to get up and get some physical activity either!

4. Workout in the backyard- I have recently found my favorite way of working out. I love working out in my yard while my daughter plays on her swing set. I take a yoga mat, a set of hand weights, and water out by her swing set and I do a circuit workout while she plays. When it is time for me to do high knees, lunges, or just a little jog, I do them around the swing set. She thinks it is the funniest thing in the world to see her mom run around her swing set. I love doing triceps dips off of a little ledge on the swing set too. After my daughter is done swinging, she comes in and joins me in doing dips, wall sits, and planks. Have you ever seen a 2 year old plank? It looks more like a two year old laying on a yoga mat while laughing at her mom who’s arms are shaking from being in a plank. It is fun and it teaches kids that you can take your intense workout anywhere!

5. Go swimming- There aren’t many kids in the world who don’t love swimming. Swimming is a great cardiac workout. Although you probably won’t be swimming laps while your kids are at the pool with you, you can still get a good workout in by lifting your kids onto slides, lifting them to help them float, and throwing them into the air to make them splash. Once again, it is all about teaching by example. Don’t be the parent who sits on the side and plays on their phone while they feel bad about how they look in a swimming suit. Do something about it and swim with your kids!

Protein shakes are my saving grace. I love the feeling that I get when I finish off a protein shake. My stomach feels full, but I know it is full of the goodness my body needs for the day. One of my favorite things about protein shakes is that I can make them taste like my favorite treats.   • 1 cup almond milk
  • 1/2 cup frozen blueberries
  • 1 cup kale

My Health Journey Must Haves

When I decided it was time for me to step it up and get healthy, I knew I needed to be equipped with all of the right gear too. I want to share with you a few of my must haves in order to stay on the healthy path.

Five Must Have Items to Support Your Health Journey

Eat Green Tea Leaves– Guys. These are life changing. Life changing I tell ya! So I don’t like the taste of green tea at all, but I wanted to get green tea into my system somehow because it helps support a healthy metabolism and gives you natural energy. My friend, Andie showed me these green tea leaves that are edible. I add them to my protein shakes in the morning and they make a HUGE difference. I put one teaspoon in each of my protein shakes. Pinterest– I know that sounds silly, but Pinterest has totally helped me stay on track. There are so many great, clean recipes out there on Pinterest. I love trying out new recipes that are healthy, but are also foods that my family will eat. Pinterest has helped me do that. I will be pinning a lot more healthy food options too so make sure you are following me on Pinterest.

Blendtec Blender– You probably already know this, but I am obsessed with my blender. There is no way I could survive without it. I have been able to create so many healthy snacks with my blender that I wouldn’t have been able to create before. This thing can make so many different textures it blows my mind. There is so much power packed into that little machine! If you want to go on a health journey of your own, you need a Blendtec.

This week, I started the Beach Body 21 Day Fix. It has been really good for me to do, but also one of the hardest things I have ever done. I have come to the realization that I am a serious sugar addict! Although I am not perfect with my eating everyday, I am proud to know that I am getting better and better as I go. I love sweets. When I am trying to keep my sugar intake to a minimum, I crave sugar like nobody’s business. I think that is a problem every sugar addict has. That is why it is so important to have recipes that I can fall back on that are both healthy and sweet tasting. I created the perfect combination to make a sweet, delicious frozen treat that is silky smooth. This skinny tropical fruit sorbet is just what I need when I need sugar in my system.

Skinny Tropical Fruit Sorbet Recipe
  • 2 cups Frozen Tropical Fruit
  • 6 oz Orange Juice
  1. Put frozen fruit in Blendtec Twister Jar. Pour orange juice in Twister Jar. Put blender on ice cream setting and blend. Twist the twister jar lid counter clockwise while the blender is working. Blend until the fruit is all blended up and the mixture is silky smooth.
  2. Makes 2 servings
  3. Enjoy!

Now to talk a little about my health journey. This week was rough. It has been Spring Break. With any holiday comes more temptations to sleep in and eat nothing but junk food. I hate to admit that I have given into that, but that is why I am grateful for new beginnings. Each journey goes through twists and turns. This has just been a little loop in the road. Steak Stuffed Bell Pepper Recipe

Ya know when you are sitting around on Sunday trying to figure out what to make for dinners for the week? Ya know when you ask your husband for his opinion and he just says something generic like, “I like whatever you cook” that leads you nowhere? Well that was me. Sometimes it still is. BUT now that my husband has tried these steak stuffed bell peppers, this is usually his answer when I ask him what he wants for dinner. He loves these! In fact, the entire family loves these! They are delicious, healthy, filling, and easy to make! What more could you ask for?

Healthy Steak Stuffed Bell Pepper Recipe

I love the combination of flavors that happens in these peppers. The steak mixes well with the onions, almonds, and cheese to create something really special.

Steak Stuffed Bell Pepper Recipe
Prep time:
Cook time:
Total time:
Serves: 6
  • 1 lb Steak cut into strips (I buy the kind already cut for stir fry)
  • 3/4 package of sliced almonds (2.25 oz package)
  • 6 Bell Peppers
  • 8 oz sliced provolone cheese, cut into thin strips
  • 1/2 onion finely diced
  • 1 T steak seasoning
  1. Cook meat on medium heat. Once meat is almost fully cooked, add onions to the pan and cook together until meat is fully cooked and onions are soft.
  2. Cut the top of the bell peppers off and hollow them out. Set the tops of the peppers aside for later.
  3. In a bowl, mix almonds, cheese, and steak seasoning together. Add meat and onions to the bowl and mix all together.
  4. Use a spoon to fill the bell peppers with the stuffing mixture. Fill them to the top. Place the tops of the peppers on them like a lid.
  5. Place filled peppers on a baking sheet and bake at 375 degrees for about 10 minutes.
  6. Let the peppers cool down a little, remove the tops of them and enjoy! We usually cut them in half and eat them that way. They are delicious!

The best part about a New Years coming is that it brings a fresh start! Every year, people set resolutions to live healthier and every year they fail at doing so. I think it is important to set healthy goals, but I think it is even more important that you achieve them. I find that making one healthy change a day can make health goals seem a lot more attainable. Instead of jumping in with a completely new lifestyle, you are changing one thing a day so you can ease into a little more.  Day One- Take measurements- It isn’t all about what the scale says when it comes to being healthy. Healthy doesn’t mean you weight a certain number on the scale. Take starting measurements on day one and keep them in a safe place. Take measurements once a week to keep track of your progress. If you are dying to weigh yourself, only step on the scale once a week or even less if you can help it.

 Day Two- Make a water intake goal. This goal could be to drink less soda and more water or it could be a certain amount of water that you are wanting to drink each day. It is totally up to you and what you are wanting to accomplish. I personally try to drink three liters of water a day. It can be difficult sometimes, but I always feel good when I do it.

 Day Three- Buy new workout clothes. I am a firm believer in having exercise clothes that you are excited to wear. I think that if you are feeling cute when you workout, you will be more willing to push yourself. I feel a lot stronger when I wear stylish workout clothes instead of baggy, unattractive sweats that make me feel like a slob. I got myself this amazing Everlast jacket from Sears that will be perfect for working out during the cold months. It has thumb holes which are always nice to have in fitness apparel and has a pocket on the sleeve for my key, MP3 player, or whatever else I may need. I adore this jacket.  Day Four- Try a new exercise. It is important to switch up your exercise routine. Just as your body can become immune to different medications, your body can become kind of immune to exercise if you keep doing the same ones over and over again. Try new exercises to keep your body “on its toes” so to speak. It also keeps you from getting bored of the same thing time and time again.

 Day Five- Make food goals. Food is probably the most important part about living a healthy lifestyle. Make goals for how you eat. This could be the amount of calories you eat, how many fruit and vegetable servings you want to eat each day, or even a goal not to eat junk food. It is totally up to you and your personal goals!

 Day Six- Buy goal clothes. For the last day, reward yourself a little for making all of these great changes in your life and go buy some goal clothes that you want to fit into. If you aren’t trying to lose weight, just trying to be healthier, just buy something that fits and have it be a reward for when you go so many days of living healthier. I got myself this adorable Polo plaid top from Sears that will be great because it will work this winter and even into spring. The colors are perfect for both seasons and it is right on trend!  All of these steps will help you get on the right track to meeting your health and fitness goals. Keep a positive attitude and keep your goal in mind! Remember why you are wanting to be healthy in the first place. For me, my greatest motivation to be healthy is to be a good example to my family. I want them to be healthy so we can live long lives together. Another motivator is the amount of conferences and events that I will be attending. I want to look my best in pictures and feel comfortable in my own skin. I know that if I am living a healthy lifestyle, I will feel great!

DIY Stenciled Food Group Tray & Fancy Towel

I love playing with new products. Especially when those new products are made by one my favorite companies in the entire world… Plaid!

They just released the FolkArt Multi Surface Paint that can pretty much be used on any surface you could ever dream of! The paint is dishwasher safe and machine washable so the possibilities are pretty much endless. They also just launched a new set of Handmade Charlotte stencils too! They are fun, kitchen themed stencils that you can do all sorts of great projects with. I already have a love of Handmade Charlotte stencils from the set I already own. Plaid Multi Surface Paint Project

When I first opened up the stencils, I knew exactly what I wanted to create. I have been trying to teach my daughter healthier eating habits, but sometimes that is hard when I am in a rush to get her lunch. I have been wanting to make a tray with a few different food groups on it so that I can be reminded to think about giving her different types of foods during her meal. Creating a food group plate was so easy! To make your own, you need…

I picked out the stencils I wanted to use on the tray and laid the tray face down. I taped the stencil down to the tray and started stenciling away!

I chose the hamburger stencil to represent the meat, sandwich, etc. I chose the apple to represent the fruit serving. I chose the cupcake to represent the sugar food group. Then, I chose the plant because it kind of looked like a leafy green and I wanted it to represent vegetables! I chose to stencil on the back side of the tray so that there would be no chance of the paint scraping off into the actual food.

When you flip the tray around, you can see the stenciled designs peeking through and it is a great reminder for me to help switch up what I am feeding my daughter.

I decided on what colors I wanted to bring into the towel and laid the stencil down. I started stenciling away! I let the paint dry before moving onto the next section so that it wouldn’t bleed or rub on unwanted areas.
