Labor Day is the unofficial beginning of Autumn and I am totally embracing it! Bring on the layers! Bring on the Fall goodies!
Since I have been also trying to eat a lot healthier, I knew that I needed to find a good alternative to the regular Autumn goodies that I usually pig out on. I found a few recipes for pumpkin cookies online, but none that had chocolate chips in it that didn’t also have a bunch of weirdo, random recipes in it too. I don’t buy weird health stuff. I just can’t get myself to do it! I adapted a few different recipes to create my own version of these healthy pumpkin chocolate chip protein cookies! They are delicious!
- 1 c. Pumpkin Puree
- 1/4 c. Applesauce
- 1/2 tsp. Cinnamon
- 1/2 tsp. Pumpkin Pie Spice
- 1/4 c. Vanilla Protein Powder
- 1 T. Honey
- 1 T. Molasses
- 2 c. Rolled Oats
- 1/2 c. Dark Chocolate Chips
- Heat oven to 300 degrees. Mix all of the ingredients in a bowl. Drop cookies onto a greased baking pan and push down a little bit. Bake for 15 minutes.
