Since I have been also trying to eat a lot healthier, I knew that I needed to find a good alternative to the regular Autumn goodies that I usually pig out on. I found a few recipes for pumpkin cookies online, but none that had chocolate chips in it that didn’t also have a bunch of weirdo, random recipes in it too. I don’t buy weird health stuff. Protein shakes are my saving grace. I love the feeling that I get when I finish off a protein shake. My stomach feels full, but I know it is full of the goodness my body needs for the day. One of my favorite things about protein shakes is that I can make them taste like my favorite treats. When I am craving something sweet, I know I can make a protein shake that can not only satisfy my craving, but will keep me full. They are definitely my favorite frozen treats.

I absolutely love the dark chocolate dipped blueberries, but although the seem like they aren’t a totally guilty treat, I find myself eating the entire bag. Instead, I created a chocolate dipped blueberry protein shake that gives my taste buds the taste they desire while still being able to button up my pants the next day.   • 1 Outshine Blueberry Medley Bar
  • 1 cup almond milk
  • 1/2 cup frozen blueberries
  • 1 cup kale
  • 1 scoop chocolate protein powder
  • 5-8 ice cubes
  • 1/2 cup water (optional if your shake is too thick)
  1. Throw everything in your blender and let it all blend together. Enjoy a tasty treat that is good for you!

I love sweets. When I am trying to keep my sugar intake to a minimum, I crave sugar like nobody’s business. I think that is a problem every sugar addict has. That is why it is so important to have recipes that I can fall back on that are both healthy and sweet tasting. I created the perfect combination to make a sweet, delicious frozen treat that is silky smooth. This skinny tropical fruit sorbet is just what I need when I need sugar in my system.

Skinny Tropical Fruit Sorbet Recipe
  • 2 cups Frozen Tropical Fruit
  • 6 oz Orange Juice
  1. Put frozen fruit in Blendtec Twister Jar. Pour orange juice in Twister Jar. Put blender on ice cream setting and blend. Twist the twister jar lid counter clockwise while the blender is working. Blend until the fruit is all blended up and the mixture is silky smooth.
  2. Makes 2 servings
  3. Enjoy!

Now to talk a little about my health journey. This week was rough. It has been Spring Break. With any holiday comes more temptations to sleep in and eat nothing but junk food. I hate to admit that I have given into that, but that is why I am grateful for new beginnings. Each journey goes through twists and turns. This has just been a little loop in the road. Each Christmas, Easter and Thanksgiving we make a Cinnamon Roll Pull Apart for breakfast. Last year for Christmas I went to the store to purchase the pre-made rolls that I showed you here and I couldn’t find a single store that had them. I guess that was my bad for waiting until Christmas Eve to go shopping! but I, and the rest of the family was devastated. I decided that I wouldn’t brake tradition just because of it and made them from scratch. WOW! They turned out amazing and now this is the only way I make them!

Cinnamon Roll Pull-Apart


1/3 cup warm water
2 1/4 tsp yeast
1/3 cup + 1/4 tsp sugar
1 1/3 cups milk warmed up
3/4 cup Land O Lakes unsalted butter (room temp)
1 egg
1 1/2 tsp salt
4 1/2 cups flour
2 1/4 cups brown sugar
ground cinnamon
1/2 cups pecans (optional)


combine 1/3 cup warm water, 1/4 tsp sugar and 2 1/4 tsp yeast in a liquid measuring cup and stir using a whisk until yeast and sugar is fully dissolved. Let rest 5-10 minutes to activate the yeast.
Place warmed milk, 1/3 cup sugar, 5 tablespoons butter egg and salt into a large mixing bowl. Using the whisk attachment, beat until well combined. Then add 2 cups flour into mixture
Switch to the bread attachent and 1/2 cup at a time, add the remaining flour on medium-low speed until fully combined. The dough will be slightly sticky but will pull away from the sides when finished combining (you may need to add/subtract an extra 1/4 cup depending on your climate!)
Place dough in a greased bowl and cover for 1 1/2 hours until double in size. Then seperate into 2 section for rolling. Roll out on a floured surface until 12″ wide and only 1/4 inch thick.
spread 2 tablespoons of butter on top of dough followed by a sprinkle of ground cinnamon, 1 cup brown sugar and 1/4 cup pecans (optional). Pat the pecans down into the brown sugar to prevent from spilling while it’s rolled. Starting at one end, roll from front to back into a tube.
Slice into 1/2 inch sections.
Repeat on the second section of dough.
Place all sliced sections randomly into a greased bundt pan. Top all of it with last 1/4 cup of brown sugar.
Cover and let rest 45 minutes (*to make night before, see notes)
Bake at 375 for 25-30 minutes

To remove from the pan, place your place on top of the pan and then flip the whole thing upside down and it should fall out!
Top with cream cheese frosting or glaze and pecans. Serve warm
Store leftovers in an airtight container.


This is great to make ahead of time for your holiday breakfast. Prepare the night before, then cover with greased plastic wrap and put in the fridge overnight. Then preheat and cook in the morning!

Funfetti Cool Whip Cookies

I had my “off day” of my health challenge yesterday. It was a happy day for my tummy to eat something sweet! I made the yummiest cookies! I found a recipe for Cool Whip cookies here and they sounded so good! She mentioned that you could use any cake mix for them, so I decided to use my favorite, Funfetti!

These cookies are the easiest, most fluffy delicious cookies ever! They taste like you popped the top off of a cupcake. I took them to the Superbowl party and they were a huge hit! Everyone’s first reaction was a comment of how fluffy and good they were. I will be making these again for sure!
Fluffy Cake Mix Cookies
You need…
1 Box Funfetti cake mix
2 Eggs
1 Container of Cool Whip (8 oz)
1/3 cup of powered sugar for rolling
1. Beat together Cool Whip and eggs.
2. Add cake mix to mixture and mix together.
3. Let the mixture cool for 30 minutes.
4. Put powered sugar in a bowl. Take balls of the dough (about a spoonful) and roll them in the powered sugar. Place on a greased cookie sheet. Repeat until all of your cookies have been made and are on cookie sheets.
5. Bake at 350 degrees for 9-11 minutes. I baked them for 9 minutes and they were perfect.
6. Let them cool off and then stuff your face with this deliciousness.
